Orange steak
This is something I came up with last year during our family vacation to Colorado, while staying at a housekeeping cabin in Buena Vista:

Ingredients
- 2-4 lbs steak - thinner steaks like flat iron or flank preferred, sirloin is good too, though
- orange juice - half a gallon is more than you need
- 2-3 Tbs Worcester sauce
- pepper
- garlic
Directions
In a large flat glass baking dish mix the OJ, Worcester sauce, pepper and garlic. Arrange the steak in the dish such that the steaks are covered or almost covered in juice. Marinate for at least an hour (two is better), flipping the steaks over in the marinade halfway through.
Grill the steaks, reserving the liquid in the glass dish. Grill them for about 10 minutes less than you usually do. While the steaks are grilling, preheat the oven to 350° with the glass dish and juice in it. Bring the steaks in and put them back in the dish and bake for 10-15 minutes. Serve. It is good to cut the steak in thin slices and pour some of the juice over it. All six people in this house like this, and that says a lot.

Sound, but I never cook steaks that long. Don't they turn out well done?

Yeah, they typically do, but only because of the people I am cooking for. While I am a fan of beef at any level of doneness (including raw - Kobe sushi...mmm...), and prefer it medium rare to medium, the rest of the family likes their dead cow well done.
But the way I cook it, it actually comes out between medium and well (the sauce helps hide the pink :o). I just cook it on low indirect heat on the grill, and as I said, subtract 10-15 minutes off normal grilling time. Using low indirect heat I usually grill steaks on my gas grill for 20 minutes (medium rare) to 35 minutes (well), turning every five minutes. So for this recipe I'd grill them for 10-20 minutes, and then bake for the rest.
My kids learned to like medium rare pretty quickly after eating at Grandma's one day. She cooks steak until it is nothing more than a dry piece of leather. It was too much for young teeth and they could hardly get it down. They noticed how much easier it was to eat steak when I cooked it and asked why. Now if I overcook a steak even a little bit they start grumbling.
